In the late 1800's, up until prohibition in 1920, there were over 3,000 breweries in the United States.

Not sure what your question is referring to - in the 1800's there were literally thousands of breweries in the US.

There were several thousand breweries. Most were local or reigonal breweries. Very large breweries like we see today were not around. It was too dificult to deliver the beer to other places until fast reliable train service was in place and later trucking. Also, during much of the 1800's beer was sold only in kegs, almost exclusively to bars and taverns. Bottling (and much much later) canning enabled you to buy your favorite brand and enjoy it at home.
