As you probably know, all these terms refer to winemaking with dried or partially dried grapes, which in Italian are known generally as Passito.

Appassimento is the name given to the process of picking and drying the grapes used in Amarone

Recioto is a legal classification for sweet red and white Passito wines made in Veneto, in particular Valpolicella

Ripasso is used to make dry Valpolicella (by refermenting the Valpolicalla wine on skins used for making Amarone)
