don't remove the apples until you are ready to switch to your secondary fermenter (or you bottle it depending on how many fermenters you use). The longer it's in there the more flavor you get. Not to mention, it's better not to expose your wine to anymore oxygen than really necessary to prevent off flavors and possible contamination.

I would wait for it to stop. Dang, now I'm thirsty.

you'll know buddy...you'll know. when its smells sweet and also burns your nose.

If it's fermenting 'on the pulp', give it 2 or 3 weeks. You should see a noticeable slowing of fermentation, and that will be the clue to rack. Any longer than 3 or 4 weeks, and you will risk off flavors due to autolysis.
