If my wine is to sweet ,is it anyway to unsweeten the wine a little, fermenting(3weeks fermenting)?!

Three weeks is way to short a time for fermentation to complete. Let it finish and stop opening the fermenter to sip samples.

What was the starting specific gravity? Generally if it is still fermenting just let it go until it is finished.

I'm not able to help you directly since I'm not a winemaker, just a wine writer & consultant. However, here is a link to the Amateur Winemakers of Ontario, which is where I'm from. I would suggest contacting them to see if they can offer some advice and, if you are not in Ontario, Canada (which I'm sure you're not), they may be able to direct you to an Amateur Winemakers group in your area.

Are you making the wine yourself or you have a bottle that's too sweet. You may just have to check the web for this one.

I find draft beer sweet from time to time & I add salt to the glass. Old habit. But I'm not brewing the beer.

Fermenting ??? What for ? Vinegar ?

Just buy another bottle of wine of a comparable level, white why not ? - but very dry - mix both wines - then pour the whole in both bottles and the rate of sugar will loose 50% in the best cases - That's all
