Inositol, (of which the most prominent naturally-ocurring form is myo-inositol, cis-1,2,3,5-trans-4,6-cyclohex... is a carbocyclic polyol that plays an important role as the structural basis for a number of secondary messengers in eukaryotic cells, including inositol phosphates, phosphatidylinositol (PI) and phosphatidylinositol phosphate (PIP) lipids. It is found in many foods, particularly in cereals with high bran content, nuts, beans, and fruit, especially cantaloupe melons and oranges. Other naturally occurring isomers (though in minimal quantities) are scyllo-, chiro-, muco-, and neo-inositol. Other possible isomers are allo-, epi- and cis-inositol.

OATMEAL MUFFINS
1? cups dry oats
12/3 cups yogurt (I use homemade yogurt).
2 tbsp. honey
1/4 cup olive or canola oil
1 egg
2/3 cup raisins
? cup wheat germ
2 tsp. baking powder
1? cups rice bran
3/4 cup of chopped walnuts
Soak oats in the yogurt for about 25 minutes. Add honey, oil and egg to the oat mixture. Blend well either by spoon or with electric mixer. Add the dry ingredients and blend well. Fold in the raisins and the chopped nuts.
Fill lightly greased muffin tins about 2/3 full. Bake at 350 degrees for about 20 to 30 minutes or until firm on top. Makes about 12 muffins.
Note: Rice bran and whole wheat pastry flour can be purchased in stores selling bulk foods or in health food stores. They should taste sweet when fresh.
