I would say that for the toast alone, 12 bottles (a case) would be safe for 57 people. This will provide each guest with a pretty full glass and leftovers if some people pass.

I don't think that leaving the bottles on the table is a good idea. First, they will get warm. Secondly, it's kind of tacky having people pour themselves champagne for the toast. Third, people will assume that the champagne is up for grabs - meaning they may start drinking it the second they sit down. If any alcohol gets left on the table, it should be a bottle of red and a bottle of white wine.

If its just for a toast, guests don't need a full glass. One bottle for 8 people is fine.

One bottle for every 4 people will be more than enough if you are using champagne flutes. Congratulations on your upcoming nuptials!

Plan on 1 bottle for every 5 guests for about a 2/3 full glass. It's enough in the glass to make it not look tacky. Happy Wedding!

I wouldn't have more than a bottle per table. Not everyone will drink champagne and buying too much can really add up fast. For my wedding we just had a few bottles for the head table, and let the guests drink whatever they had for the toast since we didn't want to spend much money, and nobody really cared or notices anyway.

I have been to many weddings that have a champagne toast and it has always been one bottle on the table seating 6-8 people... its not the only libation that they will be having and allot of people do not even like champagne but they still toast with a little in the glass. People are considerate if they see only one bottle on the table... if the table sits 10 than I would put 2 bottles on the table....and still I think thats allot...
