Homemade wine!!!!?!


Question: Hi, i am new at making wine. I have some questions.

I don't know whether to use warm or cold water to make the wine.

Is there a way to make the fermentation process a little fast??(add more yeast or sugar)???

Depending on what kind of wine you're making, why would you add water to it? If you are adding water, make sure it has been boiled to sterilize it. If adding water at pitching time, you should make it warm, but not hot (70 or 80 degrees would be best). As far as making the process faster, there is nothing you can do. winemaking takes a lot of time, and a lot more patience. Adding more yeast would do absolutely nothing, and adding more sugar would only increase the final ABV.

OK to use water do it like this....for every one gallon of fruit juice, add one gallon of water and 2 or 3 lbs. of sugar. (more sugar for sweeter...less for dryer wine). If you have sterilized water...you can use kayro corn syrup and not even have to boil it or use campden.

To really speed things up use turbo yeast...but I must caution against this because the end product doesn't taste too great....but if you are going for speed, that stuff will ferment out out 5 gallons in about 3 days.

Personally, I like a fast acting yeast that taste better like EC-1118....it'll get your wine done in a couple weeks, settles out well, produces up to 18% alcohol (I think) and has little fluctuation and fusel oils.

Using 2 packs will speed up the process even more than one pack...but not by a lot.

Now go make some wine.
