please pay attention:

i can't buy yeast from foreigner countries or online shops because due embargo against Iran, they will never ship the product to me.

and also due extreme Islamic beliefs ruling in Iran, no one will sell that.
i just have 2 options:
Make yeast myself, (please tell me how)
or replace it with another thing (tell me what)

regards

It is definitely OK to use bread yeast to make mead, though some recipes work better than others. Centuries ago, all they had was bread yeast, and things seemed to work out OK. In the references, I'm pointing to a recipe that makes an excellent orange mead using bread yeast.

If you can get fresh grapes, the whitish powdery coating on them is natural yeast. You might want to try putting some whole grapes into your honey must and see what happens.

Also, once you get a batch going, you can re-use the yeast sediment from one batch to start the next. Over time, your strain might even adapt better to your conditions. -m
