I have heard (and found it to be true myself) that - red meat , red wine white meat, white wine! I love a meal with beef and red wine!

Red wine is meant for heavy meals, beef dinners. Where the wine will not overpower the meal.

White is intended for lighted foods like pasta fish and chicken.

With me - Italian. Any Italian. And I love red wine with white sauce (Alfredo). I also like red wine with salmon and anything cheesy - bleu cheese especially. Back in the day, there was a rule of thumb for white with white and red with red (meat or sauce). These days, it's about what you like. If I like red wine with white sauce, it's acceptable now (as so many other things that have evolved with the senses) Some folks still live and die by the white/white or red/red rule. Not me.

For red meat that is cooked to medium at the most - Cabernet or Merlot

For Italian with a red sauce - Chianti (brings out the garlic flavor)

For a dish with a mixed flavor - Pinot Noir (the wine alone is full of flavor)

And for the untold secret... Chocolate Desert - Either the Cabernet or Noir

Heavy, rich flavors pair best with red wines. Sauces, glazes and roasted foods are excellent. Mild but thick foods also, lets the wine's flavor shine, such as stews or fondue.

most often, red wines are best when making stews or casseroles. why not try hungarian goulash or chicken coq au vin. very warming when it's freezing outside.

I think it's best to have a glass of red with a good beef steak. The wine just gives the meal a little touch of class! Hehe!
