What does it mean when a bartender puts an ice cube in your shot?!

They are hoping you are dumb enough to try and swallow the ice cube and it gets stuck in your throat and freezes like hell until it melts enough for you to swallow it. Yeah that's what they're doing.

no seriously though, in your shot? I think you are confusing a shot with a small glass on the rocks (with ice) ? or they are trying to fill up space in the shot glass to try to be sneaky and pour you less liquor, therefore saving them money little by little.

Alright, so a bartender should not be putting an ice cube in a shot, heck an ice cube shouldn't fit in a shotglass (generally speaking). If you are ordering your alcohol straight and he puts it in a regular small glass with ice it's called on the rocks. If you don't want ice in your drink you can order it neat as suggested by someone else which simply means that they pour nothing but whatever alcohol you ordered in your glass, no ice, no mixer.

If he puts one in my shot, I better have asked for it, which I never would do for a shot of whiskey...

could it be that when the bartender chilled and strained it a piece of ice fell in the glass by accident!

Putting an ice cube in a shot means he is chilling it. If you don't like it, order it neat.
