beaten egg whites are added to a barrel of wine to assist in removing the tiny solids that remain in suspension. Thisprocess is known as 'fining'.

It is not doen for taste, it is not part of the process of making sparkling wine, and none ofthe egg material should b ein the finished wine.

The beaten egg whites slowly fall to thebottom of the barrel, attarcting debris as they fall. The clear wine is then pumped out (racking) leaving the whites and sediments.

Some wineries use egg white as a fining agent in their wines. Most larger wineries use bentonite or heat and cold stabilisation, or even casein (skim milk protein). It works by attracting impurities in the wine and gelling them together, which allows for easier removal.
