Any alcohol can be added to gelatin (Jello) in place of some of the water called for in the recipe.
If you add vodka, gin or any other high-proof (high alcohol percentage) spirit, more water will have to be added so the Jello will gelatinize. Less water will need to be added with the Bailey's because it has a lower percentage of alcohol.
Yeah you probably could, try it out and see how it tatstes. For all you know you might stumble across a new alcoholic invention!! Have fun mixing!!
