Here's a pairing guide: http://www.gourmetsleuth.com/cpairing.ht...

Keep your bread select simple so it doesn't overpower the cheese or the wine in taste or fat. In other words... leave the herbs, onions, sundried tomatoes and garlic at the bakery - lol

Simple flatbreads and Italian or French breads are good... baguette rounds, etc

My personal favorite pairings are sharp cheddar with cabernet sauvignon or rioja, goat cheese with sauvignon blanc (Kim Crawford is awesome!) and blue cheese or Stilton with port.

Beer goes better with cheese, just throwing that out there...

Medium & old cheddar, brie, cream cheese with orange, havarti.
You could get some pumpernickel bread (round) & make a dip to go inside it ( you cut off the top & scoop out the inside of the bread). Other breads - fresh multi-grain, rye, baguette.
Some red wine (beaujolais is good) and white (sauvignon blanc). A nice sauvignon blanc is by Naked Grape (less bitter).

Real Sangria would be good with the cheese.

you can pair almost any kind of wine with cheese. in general I would pair a light flavored cheese with a light or crisp wine like a riesling or a pinot gris - cheddars go nicely with sherries- full flavored cheeses go nicely with Merlots, Cabs, etc. but really intense flavored cheese is better with a sweeter wine. And don't forget about ports, but that might be for a party all in itself. And last I suggest having some fruits- it really brings out different flavors in the combinations with the cheese. As for the bread - I wouldn't get too crazy with it. I can only suggest not using too strongly flavored breads because it should be about the cheese. Have fun

Beer goes much better with cheese. Just one link... http://www.garrettoliver.com
My personal favorite? Imperial IPA with strong bleu cheese, or a rich triple cream with Russian Imperial Stout.

I usually serve smoked gouda cheese, edam cheese, I also get a hard cheese like Dublinger Irish cheese and I especially love a creamy cheese like a mushroom brie, I also have a guiness cheese. sometimes I add a port wine cheese and blue. Three bottles of wine; a chablis, merlot and savaigon. Give each guest a bottle of water to remove the
taste when trying a different wine. also slices of apples andI red grapes. French bread and olive oil and basalmic vinegar with sundried tomatos.
