It has to do with the tannins in red wine.

The Harvard Health Letter notes several well-controlled experiments showing that tannins cause the release of serotonin, a neurotransmitter.

French reds from Bordeaux, and Italian reds like Barolo and Barbaresco, are particularly tannic.

Yes, but well worth the buzz in my opinion! Tannis, sulfates... blah blah blah!

Cause of the aging of the wine?

Because to make a red wine, the grapes are fermented on the skins, pulp, and possibly seeds. White wines are just fermented from the pressed juice. By fermenting on the skins, the red wines end up with higher acid content, stronger flavor, darker color, and lots of other natural chemical components.

Therefore, when you drink red wines, your body has to process all kinds of extra "contaminants" where white wines are just nice, clean fermented juice. Those extra contaminants in red wine will give you that extra special hangover the next day.

But well worth it when the taste is just right...yum : )
