Does anyone know how to make Pisco sour?

I had Pisco sour on holiday in Peru, and bought a bottle of pisco back with me, I think it has lemon juice and egg whites in it but not sure of the measures.

A Pisco Sour is a cocktail from Peru which contains Pisco (a regional brandy made of Quebranta or Muscat grapes), lemon (green or yellow depending on personal preference), egg whites, simple syrup, and regional bitters (like Amargo bitters, though Angostura bitters work if regional bitters are unavailable

2 ounces Pisco
1 ounce Lime Juice
1/4 ounce Simple Syrup
1/2 Egg White
1 dash Angostura Bitters.


Shake hard with ice. Strain into a Champagne Flute Use the bitters as a aromatic garnish to the top of the finished drink.

3 parts pisco brandy
1 1/2 parts lemon juice
1 - 2 tbsp sugar


Add all ingredients to a mixer with ice. Shake well (until ice is melted), and serve in a cocktail glass.

PREP TIME: About 5 minutes

NOTES: Pisco is a South American brandy made from Muscat grapes; for less intensity, substitute a Muscat wine such as Essensia or Beaumes-de-Venise. To serve in a salt-rimmed glass, rub a lime wedge around rim, dip in salt, then add ice and pisco mixture. If making up to 1 day ahead, mix pisco, lime juice, and tangerine juice; cover and chill. Add club soda just before serving.

MAKES: 12 cups; 12 servings
1 1/2 cups pisco (Muscat brandy)
3/4 cup lime juice
5 cups tangerine juice or orange-tangerine juice blend
43/4 cups club soda
About 6 cups ice cubes
Lime slices

1. In a pitcher, combine pisco, lime juice, tangerine juice, and club soda.

2. Put 1/2 cup ice cubes in each glass (12- to 14-oz. size) and fill with pisco mixture. Garnish with lime slices.

Pisco sour slushes

Use all ingredients for pisco sours (preceding) except ice. Pour tangerine juice into ice cube trays and freeze until solid, about 2 hours; release cubes and use, or seal in a plastic freezer bag and freeze up to 1 week. In a blender, combine 1/2 the pisco and 1/2 the lime juice. Cover, turn to high, and drop 1/2 the frozen tangerine juice cubes through opening in lid. Whirl until mixture is slushy; pour into a pitcher. Repeat to whirl remaining pisco, lime juice, and tangerine cubes; add to pitcher. Add chilled club soda. Pour into glasses (8 to 10 oz.); garnish with lime slices.
Tangerine sours

Follow directions for pisco sours (at left), but omit pisco and increase lime juice to 21/4 cups.
