I'm going to Mexico in May, I will be staying at a resort and what type of alcohol i will be seeing.?!
All have a variety of different beer selections...Dos Equis, Corona, and Modelo are the Mexican beers normally offered. We did stay in a resort in the Riviera Maya that had Budweiser in cans.
All the resorts we stayed in had fully stocked bars, so you were able to order martinis, cosmos, or any liqueur on the rocks. But most of the all-inclusives do not offer top-shelf liqueurs in the package...so keep that in mind if you are a connoisseur.
The only issue we had was wine selections...most didn't offer a variety and had a house red and white wine that were mediocre at best.

Lots of frozen drinks, like daquiris and margaritas.
Anything with tequila in it, and many fruity rum drinks as well.
Less soda based drinks, and more fruit based.

If you are staying at a resort more than likely you'll find plenty of tequila based cocktails that's more of a local drink but you'll easily be able to get anything you'd like. Resorts tend to cater for international guests and international tastes.
Because of the weather and vacation atmosphere, rum and tequila drinks are very popular, but in reality, the bar will be fully stocked with whatever you like. American made beer is limited to Bud, usually. Coors has very, very limited distribution in Mexico. Large stores (like Costco) will have all the same spirits you can get here, pretty much, but expect to pay just as high a price. The smaller liquor stores will have much less to chose from, and maybe nothing when it comes to vodka, gin, or scotch. Again, tequila and rum. If you like vodka, don't be afraid of the Mexican made Oso Negro (black bear). It's actually pretty decent.
And for god's sake, don't order Jose Cuervo.
