Answers:
what are you talking about? I've worked in fine dining and a bar back is a PERSON that cleans & stocks.

Depending on the type of bar and the volume it does depends on if they have a bar back or not.. most night clubs will just out of necessity. The main role of a bar back in the simplest terms is to be the bartenders *****. anything the bartender need the bar back supplies them with..mainly ice, beer, and fruit...Depending on where they work at there job may also involve setting up the bar and washing dishes. At the end of the night the receive a tip out from each bartender they helped. Different places operate differently.. Some bars require them to give a certain % of the tips the bartenders made while others just let it be up to the bartenders.

Very, very busy bars and night clubs. They clean and stock and get ice etc..... At the end of the night it is customary (or at least I always did) for the bartender to tip the bar back for their services.
