Perserve wine?

As I still have 3 quarters of a bottle of white wine left, as anybody got any ideas on how to preserve the taste?


Answers:
Wine is pretty delicate once you've opened it. These suggestions will help you keep your wine fresh as long as possible.

Instructions

STEP 1: Heat is the number one enemy of open wine, as it begins to oxidize. Keep wine in the refrigerator after opening to slow the oxidation process. Recorked wine should last two to three days in the refrigerator.

STEP 2: For longer storage, purchase a wine stopper and pump. You can find this invaluable contraption at any serious wine store, home kitchen supply store or on the shopping list.

STEP 3: Place the stopper in the top of the wine bottle and pump the air out using the pump. The stopper forms an airtight seal to keep air out indefinitely.

STEP 4: Buy a canister of preservative gas for another (though less effective) way to preserve open wine. Spray the gas into the wine bottle and then quickly place the cork back in the bottle. The gas forces the air out of the bottle.

Tips & Warnings

Remember that oxidized wine will not hurt you in any way; it just tastes funny. Oxidized wine is perfect for cooking, so certainly don't pour it out.

keep it in the fridge if it isn't too cold, and they sell these gadgets now that suck all of the air out of the bottle so it will oxidize at a much slower rate--therefore preserving the taste longer after it has been opened.
Many liquor stores sell them-you need special plugs too.

Put the cork back in as tight as you can and keep it in the fridge. Supposedly it's only good for a week maybe 10 days, but I find it stays good for about 2 weeks. If it turns a little cloudy you can always make sangria out of it. Toss in some cut up fruit (fresh or frozen) cut into small pieces and 1/4 cup sugar. Mix and let sit for at least an hour before you enjoy.

Just stick the bottle in the fridge. If you can vacuum seal it or pour it into a smaller bottle so there is less oxygen contact with the wine, that will help to preserve it better as well!!!

Keep the cork in.....

Cork it, if too much time goes by, you can always use it for cooking!!! ; )

Put the cork back in it and drink it within 3 days, after that keep it for cooking. A recent Wine Spectator research article did an experiment with all different kinds of wine preservation devices, pumps, nitrogen pumps, and just the plain old cork, they had a panel of wine experts blindly taste each wine as it was aged 2 days, 1 week, 3 weeks and 45 days, it was decided that there was no significant difference between any of the devices within the first week and all of the wine started to go bad after that regardless of sealing method.
