I used to ferment wine many years ago. 70F will be fine to start fermentation. The hydrometer is used to measure the specific gravity and two readings should be taken. One at the start of fermentation and the other at the end. The difference between the two is used to calculate the alcohol content. If your hydrometer is calibrated for a reading at 60F add 0.001 to specific gravity and make a note. Do the same at the end.

Hope this helps.
