Cachaca (pronounced ka-SHA-sa) is a very popular distilled spirit in Brazil. It's the base spirit in Brazil's national cocktail, the Caipirinha, which includes muddled lime & sugar.

Cachaca is very much like rum, the major difference being that rum is usually made from molasses, a by-product from refineries that boil the cane juice to extract as much sugar crystals as possible. And cacha?a is made from fresh sugarcane juice that's fermented and distilled.
