Question: Has anyone had any experience with making draft cider from gallons 100% natural some thing you would get at a roadside stand or a famers market. Was wondering what grains would go good w cider to make a malt cider

The main problem with draft cider is that it may have bacteria in it. (I found that out the hard way, once.) Start by treating it with metabisulfite. Then wait a day or two before continuing. I'd be tempted to use a pale malt extract, about 1/3 of the fermentables. That's just a guess on my part, though.

Got to admit, I'm not familiar with a malt cider. A fellow homebrewing friend of mine recently did a batch of cider, though. He used a few gallons from a cider mill (or roadside stand) and also added some freshly mashed apples and peaches from his own yard. The key is the yeast. I recommend a Champagne yeast, as it will result in a crisp effervesence, is highly attenuating, and can withstand high alcohol fermentation.
Check with your local homebrew shop, they typically carry materials and supplies for wine, mead, and cider, in addition to beer.
