How close in taste are Madeira and cream sherry?!


Question: I'm cooking a meal that calls for Madeira, but I only have cream sherry (oloroso). I think the two are similar in flavor, but am looking for others' thoughts.....

I am a former chef and have made alot of sauce and food items with Maderia in them, it is slightly similar, a bit more smokey and darker in colour, it is made with a similar grape, but is not aged or blended in the same way.

I am not in agreement with the lemon juice suggestion, alone is fine, there may be some residual sweetness, so use it sparingly, it has bit of a kick, and neds to be cooked or boiled to release all the alcohol. if you have some molasses a bit of it with the sherry would be more of a substitute.

Pretty close. Madeira has a bit of a tang to it.
Maybe use the Cream Sherry and a bit of lemon juice (as long as there isn't any dairy product in the recipe...)

they are very close but Madeira has more depth to it.
