Question: Can you describe the difference between highland and islay scotch whiskys for me.

Also, anyone know why scotch whiskys are spelled without the "e". Just curious. Thanks.

Islay whiskies are normally extremely "smoky" and intense while the Highland Scotches are more floral, fruity and charming. The high level of peat in the water and the exposure to the ocean on Islay account for this.
As far as the spelling, the Scots leave out the 'e' just to be thrifty. hehe.

Islay is an island which is where the whiskys are made, the same goes for the highlands

Islay whisky has a very iodine taste to it, bordering on disgusting. Ireland spells it with an "e", and that's where the best whiskey comes from! Try a Jameson 12 Y/O Distillery Reserve if you don't believe it!
