Because it's illicit, it must be smuggled...when talking about it to others about what they had for sale, what's in the crates, or what they wanted someone to ship for them, etc, the standard answer was a euphemistic way of saying 'nothing,' that is 'moonshine.'

Because they made their product and delivered their product under the light of the moon at night to avoid getting caught

because back in the day when alcohol was banned the people who made it illegally made it at night

Because they would package it and transport it at night when no one could see what they were doing.

It has been suggested that the term might derive from smugglers' explaining away their boxes and barrels as "mere moonshine" (that is, nothing).

it got is name bc of the ppl that made it worked at night under the light of the moon.bc it was illegal so they had to do that

Because they did it in the middle of night, and used the light of the moon. They did it at night, so no one would see them.
