Cheddar Cheese would be a good choice because it is strong but not too strong of a cheese!! ;-)
Hopefully the website below will help you understand this wine. As for pairing it with cheese ... well it seems that Asiago, Goat Montrachet, Gruyere etc. would be great.
Try serving a variety of cheeses and ask your guests what their preferences are. This way you can decide on which one to buy more frequently to pair with this wine.

Not with the dry white. You could match a few cheeses with a Bergerac demi-sec; even more with a red.
Enjoy the sec white with a really rich seafood stew.
