Cheddar Cheese would be a good choice because it is strong but not too strong of a cheese!! ;-)

Hopefully the website below will help you understand this wine. As for pairing it with cheese ... well it seems that Asiago, Goat Montrachet, Gruyere etc. would be great.

Not with the dry white. You could match a few cheeses with a Bergerac demi-sec; even more with a red.
