Which yeast should I use...?!


Question: I found this recipe on a scrap of paper in one of my brewing books, and thought it looked interesting - went to buy the ingredients and realized that I had not included the suggested yeast. What are your thoughts?

6.5lbs light DME
4oz Crystal (20L)
4oz black patent
2oz chocolate
1.5 oz Willamette (60mins)
.75 oz Cascade (30mins)
.5 oz Cascade (0mins)

You really didn't give enough information. What effect do you want the yeast to give? Use an Irish ale yeast if you want a dry/crisp finish. If you want the malt and hop characteristics to dominate the flavor go with an American Ale yeast. For a neutral finish go British.

That was the exact one I was thinking of when I answered. Good luck... I just used it a week ago in my Oatmeal Stout.
