The generic white Bourgogne is not going to benefit that much from aging. Louis jadot is a reputable producer and 1999 was a decent year but you have a very basic white Burgundy on your hands. It's time to pop the cork.

In all honesty, it's a little past its prime, but it should still be fine.

This is a perfecly good Chardonnay. It is meant for everyday drinking. It is nothing spectacular but nothing bad, by any means. Jadot is to France, as Kendall-Jackson is to California. Perfecly enjoyable.

Just remember that 90% of all wines are made to be enjoyed within the first 1-2 years. The industry wants you to drink it so that they can sell you more. And that is what wine is for, to be enjoyed.

If you are interesting in buying a bottle of wine to age and keep for a special occasion, just ask the folks at your wine shop. They'll be happy to help you find something. Tell them the types of flavors that you like, the body, and style. Let them ask you questions and feel you out. People's personal tastes vary wildly. I like sooo many different types. And that's why there are so many types available! Different strokes for different folks. And you like what you like!

I encourage you to taste many different types. Again, ask your merchant to help you pick some really good buys and discuss with you what it's like. Talking to people is a lot better than reading a back label. (Most of the time it's BS. It's marketing). If you try a number of different wines you can develop your pallet. You'll also find that that you will enjoy a certain wine for a while, and then you'll suddenly get bored with it. That's normal.

And don't think that you have to polish off the entire bottle or cork it up. It's usually not good the next day. So either use the red wine for cooking or toss it and then open another.

As for the Jadot, pop that puppy now, and enjoy it. =)
