What exactly are sulfates that are used in red wine and why are they used?!

Alcohol can be naturally or artificially (in a lab) produced.

Sulfites are a natural fruit preservative added to almost all wines. There are actually more sulfites in white wine than red and sulfites have never been proven to cause headaches. Here is a link that explains a lot about them:

Dried apricots contain 10x the sulfites that are in wine, so if you can eat 2 of those without any problem then you have no problem with sulfites.

Sulphites are natural preservatives in wine. I don't think they are as harmful as the alcohol!!

Sulfites occur naturally in wines (and grape juices) but are also added to serve as preservatives. They don't affect most people at all (and sulfites occur naturally in many foods), but a very small number of people have a natural toxic reaction to excess sulfites in any food, often with severe stomach cramps, a change in blood pressure, and other distressing but self-limiting symptoms.
