Strawberry Shortcake. It is really, really easy. All you do is buy those little shortcakes and get some fresh strawberries. Put the strawberries on it with some strawberry sauce. Add some whipped cream and some vanilla ice-cream. Yum.

Poached Meringues in vanilla sauce with a dab of fruit coulis

Also Zabaglione with Pieces of lady finger biscuits and berries. About 15 minutes if you have the ingredients

Buy a box of brownie mix and mix as directed. Before you place it into the oven sprinkle some chocolate chips and nuts on top then bake as directed. Cut and serve with vanilla ice cream on top. It's the best!

Apple Dumplings and Vanilla Ice Cream

I like to make apple rum ice cream topping. It doesn't take long at all though. I just add ingredients by eye(It is pretty hard to mess it up). You melt some butter in a pan, then add some brown sugar. After it dissolves a little, you add some peeled, sliced green apples and cinnamon. It should start to bubble quite a bit. Once it is nearly done(apples are tender but not mushy), add a big splash of Captain Morgan(about 1/4 cup). Cook it a little longer to burn the alcohol off and Voila! Just put it on some ice cream. You can light it a few seconds after adding the rum for some excitement(just be careful). It is good with bananas instead of apples too. You just want to add them later after the sugar is cooked a while so they don't turn to mush. I think that is almost "Bananas Foster" but I don't know for sure.

I am famous for my 'quick fruit sponge'!!!!

1) Put tinned or stewed fruit into a bowl ~ Heat fruit in microwave ~ leave to sit for a minute

2) Make a sponge mixture ~ pour over the warmed fruit

3) Bake in a hot oven for approx 10minutes

4) Serve with sprinkled icing sugar & Icecream

If you like blueberries, then go to Food Network and get Paula Dean's blueberry dumpling receipe. It takes about 25 - 30 minutes to cook. When they are done, you top the dumplings with vanilla ice cream. Yummy!!

You can make creme brulee or a trifle...so many possibilities.
Puff pastries, cookies, cupcakes.....yum yum
