How come organic wines can get away with lesser sulfites than other wines?!

Question: They say that they contain around 10 times less sulfites usually than a normal wine, so how are they able to do this and why so?

it is fresher? is this good or bad?

Thanks for your answers!

Sulfites preserve wine and keep the oxidation to a minimum. Also, sulfites are used as an anti-fungal (prevents rot on the vine).

The amount of sulfite in wines doesn't necessarily make it good or bad or improve the taste.

cause they dont have added So2 (sulfur dioxide)
