I have always enjoyed my wine, but never really understood the difference between pinot, shiraz etc..

They are different types of grapes. After that what do you want to know? If you like wine, visit some of the local wineries. A lot of them give tours and have tasting rooms. You can learn a lot talking to the guy who makes it, and you can actually see the grapes growing.

Pinot is a grape variety, Shiraz is a grape variety. Wines made from them will taste differently, just as two apples of different varieties will taste differently.

Where and how the grapes are grown and how the wine is made will all affect the taste of the wines, but a Pinot should have more in common with another Pinot than with a Shiraz and the reverse.

Different wines are produced using different varieties of grapes. There are some common characteristics that are typical for a given varietal of wine since they are made from the same grape.
