If you use "white" bread, you can. When it's baked, they do it at a low temperature so not all the yeast is killed. The bad thing is that you end up with mush at the bottom of your primary fermenter and that can be a hassle.
Depending on what you want to do, you could even go with the natural yeast that grows on the fruit but you wouldn't have control over the end product. Some beers called "Lambic" beers are done this way. The yeast is in the air which then settles on the "wort" in the case of beer, or "must" as in wine.
The best idea is to use a good yeast, sterilize everything, and keep the air away from it.
