Does sake contain suger?!


Question: I am a former chef and worked in Japan and had a tour of a Sake brewing plant, they use 2 different rices and yeast like beer to make it it is not actually a wine but a brewed spirit, like the old "Champale" in the U.S was a malt liqour.

There are sweeter varietys of sake and in the U.S and Japan and here in Canada are available more at high end liqour stores, the sweetness is derived from using a sweet rice, is has a more complex starch coating, which when cooked has a sweet flavour no sugar added, they are not ultra sweet like a liqour sweetness, just enough to take the edge of, and with that type of sake you chill it to serve, not warm it, that is actually for inferior sakes and used in restaurants to make you drink more.

I guess it depends on what you mean. Does it contain sugar from sugar cane or sugar beets? No.

by rule, alcohol is created by fermenting sugar, in this case the sugar naturally found in the rice is fermented. Most of the sugar is burned up in the process but some inevitably remains.

Natural sugars yes but i don't think there is any additional sugar added. All alchoholic drinks need sugar because sugar is fermented to make alcohol.

I never made sake but i have drank it......More Sake more fun.

Anyway, when making grape wine, grapes have a natural sugar but sugar is added. But rice has starch and a lot of it so I don't know for sure.
