It is spelled "Mai Tai."
Pour 1& 1/2 ounce light rum into a collins glass over rocks. Add 1/2 ounce of Cointreau or Triple Sec (if you want to make it really special, use Grand Mariner). Add orange and pineapple juices to fill the glass. Add a float of dark rum. Garnish with a flag (a marachino cherry and orange slice).
There are many variations to the Mai Tai, but this is your basic version. Have fun and be creative!

I have no clue what recipe ErinM just listed but it's definately not a Mai Tai.

Try this recipe for one in a pinch:
1 oz Light rum
? oz Orgeat (almond) syrup
? oz Triple sec
1? oz Sweet and sour mix

Shake with a scoop of ice a pour into a well chilled double old fashioned glass.

-OR-

This is the classic recipe (it calls for more expensive items):
1 oz. Jamaican Rum (preferably well aged)
1 oz. Martinique rum
? oz. Cura?ao
? oz. Simple Syrup
? oz. Orgeat
1 scoop crushed ice.
Shake and pour into a chilled double old-fashioned glass. Garnish with a lime peel, mint sprig and a strip of fresh pineapple.

1oz. Light rum
1/2oz. Amaretto
1/2oz. Triple Sec or Grand Marnier
1/2oz. Pineapple, Orange and Cranberry juice
Float Dark rum
Into a tall glass filled with ice.

Thats how I was taught. : )
