Question:

Will champange keep,once opened?

a very expensive bottle i opened it and only had a glass a couple of days ago i put a scew cap on and put it in the fridge can i still drink it ????????

It will go flat in a short period of time.
But usually an expensive bottle does not have a screw top?? It has a cork?

Carbonation makes champange bubbly, air in the bottle bonds with the carbon molicules removing them from the wine and the champange goes flat. It would be best to drink the rest in the next few days

It should hold for a day or two but the CO2 (the fizz factor) will slowly go out of solution. If it's well corked, it should be good for a day or three, but not much longer.

If you put the cap on tightly, it will be fine.

The answer saying sparkling wine is carbonated insinuates that it is artificially carbonated like soft drink, that is not true. It takes two years to make a bottle of sparkling wine ( here in Aus at least it is actually illegal to cal it champagne because it didn't originate in the Champagne region in France) and it is part of the double fermentation that makes the bubbles.

Many wineries are now moving to the screw caps (stilson caps) to get away from "corked" wines. Actually during the making and fermentation process the bottles are sealed with crown caps (bit of trivia for you LOL).

It will continue to lose it's fizz day by day, but perfectly ok to drink as long as you don't mind that it's starting to get a little flat. If you can't actually drink it all in the next few days, consider using it in your cooking or baking. You can substitute the champagne for water in almost any recipe. At least you won't be wasting it, especially if it was expensive. I have even used champagne in making ice cream and frozen sorbet.
