What temps are wine to be stored at?


Answers:
The standard recommendation for wines that have long term aging potential is to store them at 55-57 degrees Farenheit. The important thing is to keep the temperature and humidity stable. So if the temp were 53 degrees or 59 degrees, I wouldn't worry as long as it did not fluctuate.

If they are wines to be enjoyed within a month or two, you could put them pretty much anywhere except in direct sun or next to the stove.

There is absolutely NO REASON to rotate your bottles. They should be left completely undisturbed. As long as they are laying horizontally, that's the way they should be left. As sediment starts to precipitate out of the wine, it will collect and cake along one side of the bottle. That will make it easier to decant the wine off when you are serving it and leave the intact cake of sediment on the side of the bottle. Rotating the bottle is just going to continually disturb the sediment resulting in cloudy or chunky wines when you serve them.

Actually, around 60 F would be ideal. The key is to keep it constant and not let it go up or down by more than 2 degrees. Beyond that, make sure it rest in a dark area undisturbed and that it has a good seal and is resting on it's side.
