I want to make shrimp scampi that does not taste like alcohol.?!


Question: My husband bought this nasty like $5 bottle of wine before so we could make shrimp scamip. It ruined the whole dish! It tasted like rubbing alcohol and dish water.

I dont want to spend a lot on a bottle of wine. We don't drink, but we cook with it once in a while. My limit is around $18. Is that enough for a decent wine to cook with? Which ones are good?

Skip the wine if you won't use the bottle. There should be plenty of flavor . Use lemon juice and capers.

The Capers are great!! Enjoy! Be carefull not to use to many, they can overpower. Report It

  • The rule of thumb is to never use a wine for cooking that you would not drink straight. Try the wine first, and if you like it, use it in your cooking.

    I never put wine in my Scampi.Just lots of butter and garlic,and a little chicken broth.

    You shouldn't taste alcohol at all, bad or otherwise. It sounds like you are cooking it improperly. You should be cooking the alcohol off. Also, shrimp scampi is made with garlic, butter and lemon juice, not wine. Melt the butter in a saucepan, add the garlic, saute the shrimp, add a little lemon juice if you like. Toss with a little pasta. It isn't intended to make a ton of sauce. It's intended to lightly flavor the pasta.

    I constantly cook with cheap wine. You don't need to spend $18 on a bottle of cooking wine. $5 is fine for cooking wine.

    I'd also like to point out that scampi doesn't generally have capers. That would be piccata.

    Find another recipe without the alcohol. The alcohol is not necessary.
