Why does a beer sometimes freeze AFTER you take it out of the freezer? Even when the lid is still on?!

Question: Supercooling.

Under the right circumstances liquids can cool bellow their freezing points and remain liquid. They will freeze instantly when they are disturbed or a impurity is added.

Pure grain alcohol freezes at about -110 degrees celsius. However beer having only between 3 and 5% alcohol will probably freeze around -5 degrees so yea..

temp change

Supercooling is correct. You can also have exactly the opposite happen in some cases where you get a liquid hot enough and it will instantly boil when it's disturbed (superheating).
