I also made an Oatmeal Wheat Imperial stout where my grain bill was 5lb 2row, 5lb wheat, 1lb dark crystal malt, 1/2lb chocolate malt, and 1lb oats. Requires rice hulls or extreme patience while sparging. Use whatever stout hops you usually enjoy.
These are all easily converted to extract, or extract with specialty grains.
