Sounds more like "Kentucky Coffee" if you're using bourbon, but I'll give it a shot sometime.

I bartended in St Petersburg, FL from 1985 to 2000 and the way we made an Irish Coffee where a frozen Pina Colada is usually the more popular request:
"Irish Coffee Recipe"
1 oz. Old Bushmills Irish Whiskey
1/2 oz. Kahlua (in place of sugar)
top with generous portion of whipped cream, ladled with
Green Creme de Menthe for festive touch
top with marachino cherry (Yum!!)
