What is the reason for adding sulfur dioxide to wines?!


Question: What is the reason for adding sulfur dioxide to wines!?
I have noticed that quite often wine labels read "minimal sulfur dioxide added"!. What is the reasoning for this!? I don't drink wine, but often my dinner guests arrive with a bottle!.Www@FoodAQ@Com

Sulphur Dioxide (SO2) is one of the most important additives used at all stages of wine production!.


SO2 (sulphur dioxide) reduces grape juice and wine oxidation!.!.


SO2 inhibits the growth and activity of microorganisms!. in juice and wine!.


SO2 acts as a solvent, able to assist in the extraction of red colour pigments!. present in the skins of red grapes

SO2 is a natural bi-product of the yeast metabolism!. It serves as an antioxidant, and will scavange radicals!. Essentially it is a natural preservative against oxidation!.

But on the downside S02 can form compounds with carbonyl groups and dehabilitating some flavor compounds!. So you might prefer to have some, but not alot!. So no extra sulfur dioxide should be addedWww@FoodAQ@Com

It is a preservative!. But as wine ages it can cause further fermentation problems!. I don't use it!. I make my own wine and don't add such!. I have some that is the best tasting, made from muscidines and scuphanones!. I dare not add a "gas treatment"!. It will stop the aging process, and wine will be only as good as the day it was first filtered!.

So my wine ages, and is the best without any outside chemicals!. Just need to be completely sterile and very careful not to allow contaminants!.

All the home brew kits I have used (30-40) have included it!. It helps preserve the wine for storage/ageing!. I tried not including it in a few batches, to disasterous results!.
