Do you like dandelion wine?!
I started making some a few days ago!. Just wondering if anyone has ever had it before and if they like it!. I have never tried it and won't be able to for months (until mine is done)!.!.Www@FoodAQ@Com

I've never had it, but my friend's dad made it with his dad when he was a kid!.
We're collecting dandelions right now, actually, to make up a batch!. We'll be "brewing" in a week or two, but obviously it won't be ready for a while after that!.
Supposedly it's quite delicious - I can see how it would be - lots of nice earthy, citrusy flavors with a hint of bitterness!.
Only problem is de-petaling the flowers!.!.!. my hands looked like Big Bird the other day!.

I've never had dandelion but I make beet wine and it's delicious!.

Beet Wine (5 gal)
15 lbs - Beets
60 oz - Orange Juice Concentrate
10 lbs - Sugar
5 lbs - Honey (Cheap honey is ok because the subtlety of more expensive honey will be overpowered but avoid heavy wildflower as it comes through and seems odd!.)
10 tsp - Orange zest
5 tsp - Pectic Enzyme
5 tsp - Yeast nutrient
1!.25 tsp - Grape tannin
Remove the tops of the beets and discard!. Cube beets and put in a large pot with enough water to cover!. Simmer until completely tender!. (The smell of beets will permeate the house and stick around for a few days so if you don't enjoy the smell of beets you should do this outside!.) Strain out the beets reserving 5 cups!.
Add sugar, honey, and OJ to the beet juice and boil for 10 minutes!. Skim the top of any honey foam!.
Crush up the reserved beets and zest and add them when you turn off the heat!. Cover and let cool!.
Transfer to your fermenter (I use 6!.5 gal carboys) and top-up with water to 5 gal!. Let cool and add yeast ( I use Montrachet), yeast nutrient, tannin, and pectic enzyme!.
When the ferment starts to die down after about a week I rack off the sediment/beets to a 5 gallon carboy!. Rack again when there is a sediment layer!. I usually bottle around the 14th week and leave it alone for a year!.Www@FoodAQ@Com

I remember some folks would pick the dandelions to make dandelion wine!. That was back in the 60's!.
Never had it because I was a kid back then!. Would be open to trying it but I'm going to bet it's nowhere near as tasty as a glass of Chardonnay!.Www@FoodAQ@Com
