Question:

If a snake starts eating up its tail, what would it end up with?

P.S: The snake doesn't die, until it eats up its own head.

Well it would (to me) in a complete circle since it can't reach its head. For example; A dog chasing it's tail,if possible, bites its tail it will end up making a circle or atleast a oval. ^^ good question though!

The symbol for infinity is a snake devouring itself...but I'm not actually sure that a snake could bend it's body in such a way that it could devour more than two thirds of its own body length without a broken spine

It can't possibly eat its own head so it has to end up with A HEAD!!!
