A good assortment of olives is great! Also...slices of roasted red pepper, heads of roasted garlic, aged dried salami, red seedless grapes, artichoke hearts, roasted asparagus spears,
and of course a nice selection of not only crackers, but slices of crusty bread.
These are all things that will stand up nicely to some spicy cheeses!

Try Mexican chorizo.....spicy, bite-size, and delicious.

Here's a mustard dip for your tray. Set a open beer out for 24hrs. Mix it with powdered mustard until it is at your chosen thickness( any brand will do ). I guarentee it will spice up your cheese tray!

think of all the elements that you like
sweet.... pickles
salty... nuts
spicey..cheese..nuts..meat...p...
creamy... of the cheese or dips or spreads
bread, crackers, toast points
earthy ... olives, roasted peppers, stuffed mushrooms

Can decorate with grapes or strawberries....

Thin slices of Bosc (or other) pear will perfectly contrast and balance out the cheese. Lay a slice of cheese on a cracker, and top it with a slice of pear. Mmmm...heavenly.
