What is a good champagne to use in Mimosa's?!

A mimosa calls for sparkling wine, not necessarily champagne!. If you wanted to, you could use a blush (pink) sparkling wine!.
I agree that mixing an expensive champagne with orange juice (or anything else, for that matter) would be sort of a waste!. Save the Cristal or the Moet Chandon for special occasions, and buy an inexpensive sparkling chardonnay for mixing!.Www@FoodAQ@Com

Since you are "watering it down" your best bet is Korbel Brut, regular or Rose'!. Its a decent taste for the cost!. Best to make it with fresh squeezed juice!. If you use Dom Perignon, Veuve Clicot or Cristal for a Mimosa you are wasting money!.Www@FoodAQ@Com
Something decent but not too expensive like one of the spanish Cava's!. I like Frexinet!.

me personally I would use a cheap brand because you are mixing it with OJ!.!.!.and I prefer the sweeter brands

I agree when making Mimosa you should use a standard, not expensive champagne!. You can even use Cordon ***** Brut!.!.!.!.that is reasonably priced!.Www@FoodAQ@Com
If you are going to mix it with juice , I would recommend using a cheaper sparkling wine which will do the job and not cost near as muchWww@FoodAQ@Com
