Well you don't make the stew thick with the beer, you make/use a roux for that!.

Beer is great for stew though in general!. I make a Herold Black Lager Stew so I can safely recommend that beer to you although you'd be safe with many dark/heavy beers!. It's nothing fancy, I just marinade the stew meat in the beer for 6-12 hours and then make a pretty standard stew with it!. I'm not a gourmet or 5 star chef but I think it's pretty darn good, others have agreed in the past!.

use a cornstarch slurry as a thickening agent, cold water and a tablespoon of cornstarch, bring your stew to a boil and add the slurry bit by bit til it reaches the level of thickness you want!.Www@FoodAQ@Com

Get a recipe for boeuf carbonade and add more vegetables!. Use a roux or arrowroot to thicken!.Www@FoodAQ@Com
