Well I believe bittering hops are used early in the brewing process to impart a bitter flavor to balance out the maltiness!.!.!.then the flavoring hops are used towards the end to impart nice flavor!. They usually give the beer a nice complex flavor that could be piney, earthy, even citrusy!. And like Oikos said, hops are a natural preservative, originally used to preserve beer when being shipped oveseas!.

bittering hops are usually hops that dont have a great flavor but are cheap and high in alpha acids and are boiled for 60-90 minutes (the longer you boil the more alpha acids are isomerized, making hte beer more bitter)!. flavoring hops are hops with good flavor and are added the last few minutes of the boil, they give beers the flowery, herbally, spicy, or citrucy flavor that beers have pending on the variety, different varities have different flavor characteristicsWww@FoodAQ@Com
