Fermenting Juice?!
I was looking forward to taking a swig of my favorite berry mix juice, today!.!.!. I lift the bottle to take a drink, and noticed a difference in the flavor!. So I look at the juice and it's all cloudy inside, not clear like usual!. I realized then, that it had started to ferment!.
The juice comes in a rather large bottle, and I usually finish the bottles before the first or second day, while it's still fresh!.!.!. but haven't been home alot this week, and it had a chance to sit out some!.
The thing is, it had a tangy flavor to it, now!.!.!. and I actually kind of like that better!. People drink alchohol all the time, and that's mostly fermented things!.!.!. but aren't those distilled and pasturized, so they're safer!?
Would it be safe to drink the fermented juice more often!? Or, since it's not Pasturized, should I just throw it out!?Www@FoodAQ@Com

you made pruno! it may well be safe to drink but you cannot be certain without using proper fermentation methods, ther are a few strains of yeast and a number of nasty bacteria that might be making toxins in your beverage as we speak!. if you would like to experiment with fermentation feel free but go to a local hombrewing or winemaking shop and get the gear and instruction to do it safely!.

If you like the taste of what you got, save some of the juice and use it to start the next batch!. The chance of getting the same yeasts/bacteria in the next bottle just by exposing it to the air are infinitesmally small!. You can keep your "starter culture" in the refrigerator!. If you ever get the runs from your homemade wine, throw out the starter!.Www@FoodAQ@Com
If its juice from concentrate it is not fermenting, but going bad which will give you a stomach ache!. If its 100% juice then it is fermenting, but remember that the juice is already pasturized so the funny juice will already be!.Www@FoodAQ@Com
nothing about the fermentation process will make it undrinkable!. It is probably partially fermented!. Almost any liquid with sugar in it will ferment if exposed to yeast, even yeast that is in the air!.Www@FoodAQ@Com
