Two reasons!. Unlike beer or wine yeasts, bread yeasts are bred (no pun intended) to produce maximum carbon dioxide and minimum alcohol!. What little alcohol is produced gets evaporated during baking!. That's why cakes that get soaked in rum are baked first and soaked later!.Www@FoodAQ@Com

because you stop the raising process before alcohol is produced!. if you let the bread over rise you will taste the alcohol try it some time!.Www@FoodAQ@Com

If you are talking about beer batter bread , the alcohol would bake out of the bread!.Www@FoodAQ@Com
