Question: Do they make white wine from green grapes!?
Might sound like a dumb question but I really wanna know!. Does red wine come from purple grapes!? And how long do the grapes ferment to make a really good wine!? How long to make it sweet!?Www@FoodAQ@Com

White wine can be made from white, green, red & black grapes!.

Red wine can be made only from red/black grapes -- that is because the juice of most grapes is clear and the red colour comes only from the skins of red/black grapes!. So to make white wine the juice is squeezed out from the grapes and fermented!. To make red wine the skins and the juice are fermented together and the color is extracted from grape skins!.

How long fermentation takes depends on many factors, including how sweet the finished wine is to be, but a dry wine would take betwenn 2-7 days usually

How sweet the wine is depends on how much sugar is in the grapes and the fermentation!.

During fermentation yeast converts sugar to alcohol!. When all the sugar is converted, the yeast dies and you have a totally dry wine!.

To make a sweet wine you must stop fermentation while there is some sugar remaining!. Winemakers have several tools attheir disposal, including chilling the fermenting wine till fermentation stops and then filtering out the yeast!. Thus fermentation time will be shorter than if made dry!.

You'll note that sweeter wines have lower alcohol!. That is because not all the sugar has changed to alcohol!.

Another wasy to stop fermentation is to add alcohol -- basically adding brandy!. Yeast dies when the alcohol level is too high, somewhere around 15-18% alcohol!.

Port is a sweet wine!. It is a type of wine known as 'fortified' because it has been strengthened by adding brandy before fermentation is complete!. Thus you have a sweet wine but with high (around 20%) alcoholWww@FoodAQ@Com

The color of wine is determined during the fermentation!. For red grapes, merlot, shiraz, cabernet sauvignon etc!.!.!. the skin is left in the barrels during fermentation, this is what gives it, its color!.

The sweetness, comes from the grape!. Sweet wines are left on the vine longer and allow more sugar to be made by the vine / grape!. Late Harvest Reislings tend to have more sugar because the start to wither, loosing water but leaving more sugar in the grape!. This tends to make the sweeter wine higher in alcohol levels!.

Great question! Many people are confused about the color of grape juice, and its relation to the color of the grapes' skin!. Truth is, you can generalize and say that winegrapes come in two categories: green and purple!. Regardless of the color of the grape, the juice that will come out will always be light yellow!. As mentioned above, the color of the skins will affect the color of the wine, and the barrels will affect the color as well: a Sauvignon Blanc fermented in stainless steel will have a much lighter color than a Chardonnay that was fermented in oak for 12 months!. (The latter will be a much darker hue of yellow)!. As for the sweetness of a wine, that basically depends on the amount of sugar that is in the berries, and the amount of sugar depends on two things: the innate characteristics of the grape itself, and when it is picked!. Some grapes just have more sugar in them naturally, (like Riesling) and therefore produce sweeter wines!. Others are actually left on the vine until they begin to shrivel and look like raisins!. As they shrivel, the water evaporates, and the sugars in the grapes become more concentrated!. Then they are picked and pressed and made into wine, which is a sweet, more syrup-like wine!. You may have heard the name of these wines before: usually, they are called "Late Harvests!." French wines don't put this on the label, which complicates things a little, but there are still ways you can determine if a French wine is a late harvest: usually, they come from the Sauternes and Barsac regions!. Often, it is believed that white wine is made of green grapes!. This is quite true, but white wine can also be made with red grapes!.

The flesh of the red grapes are white and only their "skin" is red!. Most wines are made using only the flesh of the grapes!. The color of the wine is made when the interior is crushed with the pulp exterior!. This process then allows tannins to infuse with the red wine, giving it taste!.

Like the White Zinfandel, it is a white wine made of red grapes!.

I'm not sure about fermentation, but if it's done through Barrel Fermentation, it's usually left for 6 weeks, in a low temperature room!.
